I had a glass of this at the end.
It is rather dry?
But it has an elegant, umami dryness behind it.
Especially the rice flavor and the aroma of koji rice malt.
If you squeeze some kabosu on the salt that came with the fried bean curd you just had, the sweetness of the sake will increase and the balance will be happy. ❤️
