Sake and Otsumami Chuin Shinmachi Store's November SAKE club "Tasting Aged Nama Sake".
The fifth and later sakes will all be 2019BY, or about 4 years old.
The fifth sake is Kinjaku Junmai Ginjo Nama.
Fruity and juicy Kinjaku, now what will happen to it after aging 🤔.
The appearance is crystal with a slight yellow tinge.
The aroma is not fruity, but rather a light burnt aroma that is just before the nutty and woody aroma of aging.
The mouthfeel is smooth and smooth.
The palate is crisp and clean, with a rich, juicy sweetness balanced by a refreshing yet rounded acidity.
It is delicious. ☺️
There is a slight nuance of bitterness with a sense of maturity in the aftertaste.
Throughout the entire range of aged nama-shu, the aroma seems to change a lot and tastes may differ, but the depth of flavor is likely to be highly appreciated 🤔.
Kinjaku also has a large change in aroma, and although the taste is not that matured as it originally has a soft taste, after about 4 years of aging, all the corners have been removed and the taste has become more rounded and mature, as if it has more depth.
