＜The food sake of the brewery of Jikin.
This is Mr. Takasago of Kiyamasa Shuzo, which brews Jikin.
The aroma is a fumon of rice flavor. It is not sweet or fruity, but you can tell it is of high quality.
The mouthfeel is slightly tangy and gently sweet. It is very elegant. But then, the umami starts to spread all over the mouth. It spreads throughout the mouth, and a hint of "aru" aroma wafts from the nose. This hint of aroma is very good.
It is not fruity at all like Jikin, but a very fine, robustly umami dry sake. It has a sense of quality.
If we compare it to Ghibli, it is like Kushana from "Nausicaa of the Valley of the Wind". It is Kushana, the cold and merciless commander in the first half of the movie version. He does not show any sweet face.
Oh! I did a little checking and found that Takasago-san from Shizuoka, whom I drank with before, also compared him to Kushana. Coincidence. But that is Kushana singing a lullaby in the original version, so even though they are the same princess, they are very different. In the original version, she is a charismatic commander who is deeply portrayed in a more human way, and is greatly admired by her subordinates.
