Polishing ratio 50%, alcohol content 15%, 100% Yamadanishiki from Hyogo Prefecture
The aroma is not strong. Slightly fizzy. Sweetness and acidity come through on the palate. It is not a clear and refreshing Junmai Daiginjo, but a robust but not cloying sake that leaves umami in the mouth and finishes with a bitter taste.
