Yoshi
This week's choice is "Saku Enochi" from Mie Prefecture.
Of course, I knew Saku by name, but this was my first time to buy it. There are many varieties, but I chose Enochi without prior knowledge.
The taste of the rice is very mildly sweet and the flavor of the rice spreads on the palate.
This is a perfect match for sushi and sashimi.
The refreshing sharpness that goes down the throat also showed the quality of the brewer.
I guess you could say this is sake that is neither modern nor classic.
