This sake is made from 45% "Yuki-Majin" rice suitable for Daiginjo-grade sake brewing, developed over many years in Yamagata, and brewed in the Nama-Moto style. Attractive strawberry aroma, gorgeous and elegant. A little sweet, medium dry. Smooth mouthfeel with no cloying taste. Full of fruitiness with a soft juicy flavor in the mouth. There was a little alcohol spiciness in the back, but it was easy to drink, not disliked. Typical mellow umami mouthfeel. Beautiful - it was a delicious sake 😄. I have had Yuki-Megami before, personally I like this one the best. It does not have the bitterness of Kamikigen, and has a deeper sweetness than Eikofuji. Would recommend, but seems a bit hard to find... As for snacks, we had pork with miso, crab miso, eggplant stir-fried with miso, bitter gourd and pork belly stir-fried with sweet and spicy sauce, and broccoli stir-fried with garlic. Crab miso and sake are an unbeatable pair!
