This is a new sake rice called Hyakumangoku No Shiro. The label says it is a clear tasting rice with low protein content.
When I drink it, I can taste the umami but it is also light. Is this due to the taste of the rice on the label?
In addition, it has good acidity and a gaseous taste. There is almost no sweetness. There is also little ginjo aroma.
Pairing with Ate
The label recommends seasonal vegetables, white meat fish, and crustaceans, and it was true when we tried them all. ☺️
