It has been a while since I have had Hozu and Sansho. Perhaps it is a characteristic of this year's sake, but it is less acidic than it has been until last year, and the umami of the rice can be felt more. Hozasu has more wildness than Yamadanishiki, and although it is not as spectacular, it has a refreshing feel to it, giving it the feel of a summer sake. Personally, I think I like it better than regular Homasu. I would like to have it again on an irregular basis. Thank you for the sake.
