I don't seem to remember drinking Mutsu Hachisen itself since last year 🧐 but I have to have a bottle of the new draft, so I'll open it right away 🍶🍶.
The ginjo aroma is very gorgeous, with a mix of apple and muscat aroma and lactic yogurt flavor 👌.
The taste is very sharp, with a sharp acidity and spiciness, and a little bit of rice flavor in the aftertaste, which is very Hachisen-like. It is made on the lees, but it is thin, so there is not much change in flavor, but I have the impression that the umami and richness have been increased.
This year, too, it was delicious.
