It is light and dry, with a refreshing sharpness. As the brewery is located in Ishinomaki, a minato town, there is no reason why it should not go well with seafood. We enjoy grilled sea urchin with this super dry sake. The name "Hitakami" is read as "Hitakami," and perhaps because it is a sake brewery, it does not become muddy. It does not become cloudy.
ALC 15-16 degrees. Hitomebore rice polished to 60%. Sake meter +11.
