Founded in Kyoho 2, this sake brewery in Uonuma, Niigata celebrated its 300th anniversary not long ago. Whoa? I went to their website to check it out. It is said that they have been making light and delicious sake in Niigata, where light and dry sake is the mainstream. This is delicious. Today's entrées included firefly squid, pickled eggplant, and bonito tataki, and it went very well with the relatively light entrées.
