It is delicious!
The brewery seems to be in the trial-and-error stage, but I have the impression that they are making sake with great care and attention.
It is difficult to describe, but the rice, soil, water, and terroir, or perhaps I should say the terroir, have a unique flavor that is rooted in the region, and the Yamada-Nishiki and the terroir of Fukushima give it a unique flavor.
I was very impressed with this sake in the sense that I could feel the depth of the sake brewing process.
Please note that this sake is a bit rough when first opened.
