This is Matsui Sake Brewery's raw sake.
I was surprised at how crisp and clean it was.
The brewing water is made from their own spring water, so the water must be very soft!
It has a nice sharpness, but the umami (flavor) is very strong, so it does not have the lack of flavor that is typical of light sakes!
I think I will have a bottle next time. Thank you very much for the sake!
