This bottle was brewed with yeast No. 6 from Shinmasa.
It was so good last year that we are repeating this year!
When you take a sip, you get the impression that it is a little bit hard,
The sweetness and umami did not develop, and only the acidity was a little tangy,
I heard that this year's rice was hard to dissolve, so I let it sit for a few days and let the temperature rise, and the sweetness and umami were much more pronounced.
It was delicious, but the impression was not as high as last year's, and I finished it!
