100% sake rice "Hyakumangoku no Shiro" is used. Polishing ratio 46%, limited quantity sake using Kanazawa yeast.
The color is clear and the aroma has a fresh ginjo aroma. In the mouth, there is bitterness, sweetness, and a sharp dryness. Refreshing and extremely delicious. It is quiet but very elegant. As expected from the little Kyoto in Hokuriku. I wish I could have enjoyed it with Kanazawa's local cuisine 😃I paired it with grilled chicken thighs today, but it would probably go great with white meat fish 😋.
