When the bottle is opened, the aroma has a fresh, standing aroma derived from microbubbles, and a slightly mild ginjo aroma like pears and white peaches. There is a lactic aroma of yogurt in the air.
When poured into a sake cup, the supernatant is a slightly transparent pale ivory color, which turns milky white when stirred. The thickening becomes smooth and silky in texture.
When you take a sip, you will feel a light carbonation and a gentle sweetness from the muddiness spreads in your mouth. Afterwards, a clean acidity tightens the whole. The aftertaste is crisp and clean, with a slight lingering bitterness and a lingering sense of gas.
It can be enjoyed without stirring the lees.
