When drinking light nigori, chill the bottle before drinking the supernatant, then turn the bottle upside down and drink the nigori. The supernatant has a clean and crisp quality. After mixing the two, the sweet and umami flavors spread in the mouth. It has a moderate bitterness and goes well with shabu-shabu and nabe (hot pot) 😁.
