Yoshinogawa hiyaoroshi.
Yoshinogawa is a brewery and brand that I personally consider to be the benchmark for light, dry sake in Niigata Prefecture.
It has the palatability that is typical of Yoshinogawa, and the umami that is typical of hiyaoroshi.
Tonight's main dish was a miso butter corn hot pot with Chinese cabbage and chicken.
