It has a modern feel with a sense of gas from fermentation, a rich umami and a gorgeous sweetness of rice! It's not too harsh when drunk chilled, but very tasty. ☺️ The crisp acidity becomes more noticeable as the temperature rises. I think I let it sit for too long.
