Sake made from yeast isolated from crimson roses "Mr. Lincoln".
The aroma is slightly sweet and sugary, with a hint of lemon and a mysterious richness.
The palate has a gentle sweetness and a lovely lactic acidity. There is also a slight matured flavor.
From there, the sweetness and lemon acidity spread and disappear in a flash. It is a beautiful sake. The aftertaste is also beautiful, and before you know it, it's gone.
As the temperature rises, the acid bitterness of the lemon comes out a little, which is also pretty.
It's a very gentle sake, with the youthfulness of lemon, but also a sense of maturity, which is very strange.
If I were to use a Ghibli analogy, it would be Dora from "The Witch's Delivery Service. She is the cute grandmother who comes to buy medicine for Kiki's mother.
