Akishika純米酒 槽搾直汲

Recently, I have been a little addicted to soba (buckwheat noodles), and I like to drink at a soba restaurant, pick something to eat, and finish with soba.
Tonight, I chose a sake from Osaka, which I personally do not have much connection with. It is Junmai Akirika.
It has a strong punch, as one would expect from Osaka. I thought it had a good balance of umami, acidity, and a bit of sweetness.
I paired it with homemade Karaboku (Chinese ink). (I paired it with homemade Karaboku, which was so salty that I had to leave it out. I left it out because it was so salty.)
