Sake strength -66, acidity 3.4, sweetness like plum wine due to the red yeast.
It tasted like it could be served on the rocks or with lemon and soda. Delicious.
When I saw the specs, it reminded me of Tottori's KARSIS, but it was totally different.
The name "Fuji" comes from the fact that the character for "Eiko" was added to the original sake name "Fuji" at the time of its establishment to express the wish for prosperity. It is also said that the symmetrical character "Eiko Fuji" represents the brewery's philosophy of "sake brewing with no two sides of the same coin.
