The firefly squid is almost finished.
So, I pulled out my favorite sake.
Atago no Matsu Honjozo
This is a really nice sake with a beautiful, unadorned mouthfeel and a great balance of umami. Not too light, not too heavy, and not too tiring to drink, this sake is just right for everyday drinking. Junmai Ginjo and Daiginjo are also delicious, but this deliciousness and drinkability can only be achieved with Honjozo.
This sake is good to drink at room temperature with a cup of hot water, but it is also very drinkable chilled. The combination with firefly squid with vinegared miso is perfect!
