NIJIIRO is a sake made with seven different yeasts and a new variety of rice called "Niji-Kirameki.
It has a pleasant acidity and a slight carbonation. It has a gentle sweetness that is typical of rice. It has a nice taste that is typical of Shirakiku.
On the walk from Ricaman, where I bought NIJIIRO, I saw a rainbow. I was impressed.
