It is a ginjo of Kusudama, the main brand of Hirase Sake Brewery in Takayama City.
We found a bottle at a liquor store in Takayama City and bought it.
It is made with Abelia flower yeast. This year's bottle has been sold out.
The aroma is a nutty ginjo aroma with a strong alcohol taste.
The mouthfeel has umami, weak acidity and sweetness, and finally a weak bitterness. It is good that the umami with a sense of rice is asserted.
Kusudama is good after all.
