Warmed to 40 degrees Celsius in the "Kanmakase" sake warmer under the supervision of Shinkame. The sense of rice is enhanced. But the umami does not spread.
60 degrees. More umami. The spiciness is also good.
It goes well with oysters steamed in sake.
50 degrees when cooled down, the acidity settles down and the umami increases.
