Nama yeast, raw, 85% polished rice
I was careful, but when I uncorked it, it popped out with a bang.
That was close... glad it didn't spill ^_^.
So I corked it again and slowly mixed it with the mash...
As soon as I removed the cork, it spilled.
What a waste...
The schwizziness of fermentation is amazing.
Yogurt feeling, but not harsh.
Just a hint of sweetness. But I can feel it well.
It's refreshing for a nigori, and I really like it! Easy to drink!
I was expecting a more peculiar sake, but this is an orthodox and tasty sake, and I am satisfied with my choice.
I'm so happy I chose this sake.
