The name "Kamerei," which means "long life and eternal prosperity" in Japanese, was given by Kotaro Ishii, the head of the brewery, in the early Meiji period (1868-1912). In Hiroshima Prefecture, where most sake is soft and sweet, Kamerei has continued to produce "refreshingly dry" sake as it always has. The sake is made from highly polished Yamada-Nishiki rice, which is suitable for sake brewing, and it produces a mellow aroma and the original flavor of sake.
