At my usual liquor store, I bought some local sake for the first time in a long time. I bought a local sake from the same prefecture.
The brewer boldly blends only the last part of the "blended" portion of the sake when pressing the unrefined sake, using the brewer's own unique blend. It is a luxurious sake that uses a lot of pure rice daiginjo and junmai ginjo. (quoted from Fujii Sake Brewery website)
It has an aroma like apple cider vinegar, yet it is lightly effervescent and sweet and sour, yet has a firm umami flavor.
No wonder it is so popular.
