Yunokou, a rice produced in Iwate Prefecture, is polished to 30%-5% and brewed at ultra-low temperature fermentation.
The sweetness is not too strong and there is a sharp aftertaste.
I thought it might be a little less fruity than typical Akabu, but I thought this was the concept 😄.
It is a surprisingly addictive and unstoppable type of sake!
