A gift from my son in Nagoya. Junmai-shu made with only 77% polished Yume-Ginko, Aichi's sake rice. This is a collaboration project between farmer KT, three breweries in Aichi, Maruishi in Okazaki, Gigi in Owari, and Shikishima in Chita. It is interesting to know about Aichi. Like Nitoshi, the aroma is fruity despite being junmai, and the sweetness is strongly felt and tastes good, but depending on the accompaniment, the bitterness may appear. It is refreshing and delicious. It was a wonderful sake.
