武侯祠Tonight is sake in Wakayama. I had been seeing it for some time, but had not given it priority. I had the impression that it was hard-edged, with "Kurumizaka" written in kanji on the label in large letters. But the one I actually bought was written in alphabetical characters. I bought it, imagining that perhaps Kurumasaka's real intention was something else, and that this might be a challenge tank for a young brewer. The aroma seemed strong, hard to describe, dare I say it, the smell of chewed grapefruit leather. Not very helpful. The taste is distinctive. I took it as a delicious expression of bitterness. What a marriage I discovered with the bread of kujo leek and miso, which I bought at a bakery in Arashiyama. The way I felt the taste of sake after eating it changed completely. I learned that sake can be perceived in such a different way depending on the dish.
