Yellow. When heated, it has the sweetness of rice and a flavor that makes you think there is soup stock in it. It also has a sour taste. When it is cold, it has the same sweetness, a dried grape-like aroma, and a bit of bitterness.
It is amazing that this type of sake is not bitter even when cold. It is very tasty. It is wonderful.
Purchased at a sake brewery. It is located in a rice field in Tottori City, Tottori Prefecture.
The sales floor is a museum, but it is unlocked so you can look around on your own, or call them up when you want to shop.
They are particular about the rice they use for their sake, separating the rice into tanks and labeling all their sake with the name of the producer. It's a lot of work to manage.
The sake brewery was not commercial, but I could feel their strong enthusiasm for sake making, which is the type of sake brewery I like.
