The NO.6 S type has been lying in bed for more than a year. I left it long enough to wonder whether I should open it for regular drinking or not.
It is modern and very elegant. Sorry for the stupid explanation, but I think that's the best way to describe it. LOL!
Sweet and sour, but not sweet. It is well-balanced, and the umami expands softly and disappears quickly.
The bitterness of ordinary sake would expand at the end, but Shinmasa's astringent taste gives it a sake-like character and then disappears. This uniqueness or uniqueness is indeed a unique characteristic!
I always enjoy this sake with osechi dishes when I go back to my parents' house for celebrations, and I think it goes better with modern osechi dishes that use a lot of Western ingredients such as cheese and ham than with traditional osechi dishes.
Of course, it is delicious enough to drink on its own, so I think it is a wonderful sake for anyone. It is understandable that there are many beginners who start here. For those people, they can drink it without worrying about pairing or marriage.
I think it is the kind of sake that can be enjoyed very well by people who are not only interested in food.
Personally, I think that Niimasa is a delicious sake that is good only for occasional drinking, but when I drink it occasionally, I am reminded of how great it is.

I know how you feel 🤔 if you should open it for everyday drinking 😅 you can't open it if you don't take the plunge 😅.

It's the nature of premier drinking...so I actually drank with my family and relatives at my parents' house on New Year's Day lol.
Like the food, I'm not sure if it's ok to have a good one every once in a while lol.
