Ippodo Senzan Hachitan-Nishiki Unpasteurized Sake
Bouken-san insisted on drinking it, and we decided to share a bottle with him since he had enjoyed ICHIJUSHU SENZAN before.
I filled 3㌥ for two bottles and left.
When I poured it into the glass, fine bubbles adhered to it.
The color is clear and slightly yellow.
The aroma is slightly alcohol-driven, with a slight citrus aroma in the back.
The mouthfeel is slightly effervescent and gassy, and the palate is light and minerally, with a slight citrus acidity and a rustic astringency on the tongue, which finishes dry with a bitter taste. The finish is slightly spicy.
As bouken reviewed, it was also a bit spicy.
