Yamada Nishiki is used
This is the first time I've ever seen a sake made with a traditional yeast mash.
It has sweetness and soft acidity at first.
Later on, the flavor and sharpness that is typical of a traditional sake brewer come out.
The balance is very good and delicious!
It's an unpasteurized sake, but I think it would be good warmed up as well😊.
