Youho is a sake that requires attention when opening the cork, and this time the cork really flew open. When poured, it was foamy and bubbly. It has a whisky-like oak aroma with hints of banana and grapes, and a sweet and sour aroma like yogurt. When sipped, the impactful carbonation is followed by a heavy aged aroma and sweetness. The sweetness and bitterness increase when mixed with nigori. The carbonation stimulates the aftertaste, and the sake has a sharp aftertaste, which is typical of Yuho. I think I will drink it with new sake next season.
