It is interesting how the gorgeous, smooth sweetness of Yamada-Nishiki differs from the acidity of Hidahomare.
Both are delicious, but the food pairings are different.
Rice used: 100% Yamadanishiki
Rice polishing ratio: 40% for koji rice, 50% for kake rice
