The aroma is of fermented, astringent koji. Apple cider vinegar.
In the mouth, crisp acidity like citric acid, fruitiness and sweet-sourness of apples and berries.
The impression is clear but rather thin.
As you swallow, it rises with a good sharpness, and the sweet acidity continues in the aftertaste.
Overall, the acidity is the main focus and there is almost no spiciness or bitterness. It was a little monotonous impression if you keep drinking.
It is the first time to try white koji.
I have high expectations for the future!
