Yuki no Mayu was recently rebranded from Brewing Forest. I noticed that the label combines three "yu" characters rotated 90 degrees. We chose a junmai daiginjo, a rare sake that is served in a single-stage brewing process, which we had never tried before.
The taste was sour like yogurt juice. It was like a one-stage brewing process, right? I also felt an apple-like sourness. It is sweet but refreshing. Beginners will be surprised that it tastes like juice.
I think it would go well with a pizza with cheese and honey. It was very tasty.
