Kochi Food Trip - Full Kochi Trip (7) Tosa Shiragiku was drunk at the Sake-1 Grand Prix, and I was impressed by its fruity taste, and in my opinion, all of them are delicious. Tosa Shiragiku Bokuchiri Special Junmai It has a full-bodied flavor and sweetness, and is extremely tasty. It is written as "dry" but it is not. According to Mr. Ippo, it is a sake with a deep pocket. Tosa Shiragiku won first place in the Junmai category at a domestic competition and has won many awards at salmon competitions. I was curious about the breweries that use deep seawater for brewing, and when I asked about it, I was told that there are only two breweries that use deep seawater now, and that they don't do so much anymore because the nuclear power plant problem has raised the bar for using ocean water, and the procedures are troublesome. When I asked him if the taste was different, he replied that it had a mineral taste. I asked him if it would change the taste, and he replied that they use deep water not to give a mineral taste, but to assist fermentation of yeast that has weak fermentation power. Ippo-san's talk and explanation were very interesting and I was very excited.
