The same aroma as the topping, the full flavor of rice, and the soft sweetness spread over the clean acidity and slight bitterness, and are quickly quenched by the mild spiciness of the alcohol.
The aroma quickly fades, the umami comes in, and the sweetness and bitterness extend, making it easy to drink without feeling too spicy. It is better to drink with a meal than by itself.
It goes well with bonito tataki from Kagoshima, yellowtail with sudachi salt from Kagoshima, stir-fried eggplant and pork from the veranda, and pork miso soup with ginger.
It also went well with cod garlic pasta.
