Rishu
I found some Ichiebijin that I hadn't seen at the liquor store. They said it just arrived yesterday. Be careful when opening the bottle! The bottle was not screw capped, but crowned. The liquor store was very careful to warn us, but we opened the bottle without any difficulty.
The supernatant had a clean taste. After closing the bottle and stirring, I took a sip. It was quite refreshing among the nigoris we drank this year. Then, bitterness, umami, and acidity come in. It is delicious. We had it with tuna sashimi which has a strong flavor.
