Shimane, the birthplace of Japanese sake. 3rd trip to Shimane. Purchased at Roadside Station Goise Nima. Summer sake. When I bought it, it was quite acidic and stood up too well, but after 3 days of drinking it, I got the impression that it had mellowed a bit and gained some umami flavor, making it a nice summer sake. ＋I would recommend it to those who prefer a little more dryness and are OK with acidity.
