When we opened the bottle, the bottle was not well controlled and popped to the ceiling, despite the warning label on the bottle.
Strong gassy feeling.
Slight grapefruit and lactic acidity on the top.
The refreshing aroma and plump rice flavor, which is not strong, spread with a moderate sweetness, and are quickly followed by a citrus bitterness and acidity.
This sake has a refreshing and gentle balance. It can be served as a stand-alone sake or as an in-between-dinner drink, but it seems to go better with meat dishes than seafood dishes.
It went well with homemade Bolognese pasta.
It also went well with grilled shiitake mushrooms with butter and fried oysters.
