At the 40th anniversary event, 12 kinds of sake were compared. I was deeply moved because it was the first sake I fell in love with. I didn't know there were so many varieties. Kubota Sparkling Kubota Suiju (Daiginjo-namaishu) (3) Kubota Manju (Junmai Daiginjo) brewed with in-house yeast 4) Kubota Manju (Junmai Daiginjo) (5) Kubota Junmai Daiginjo (Junmai Daiginjo) (6) Kubota Senju (Ginjo) (7) Kubota Senju Aki-agari (Ginjyo, Harajuku) (8) Kubota Beniju (Junmai Daiginjo) (9) Kubota Senju Junmai Ginjo (Junmai Daiginjo) Kubota Hyakusyu (special honjozo) (11) Kubota Hekiju (Junmai Daiginjo, Yamahai brewing) (12) Kubota Yukimine (Junmai Daiginjyo, Yamahai brewing) The sparkling sake was sweet and juicy, while the raw sake had a strong acidity and depth. I especially liked the in-house yeast brewed sake, which was very easy to drink and soft on the tongue. It is not often that I have a chance to drink sake, but that is why I am glad to have encountered it. I am still familiar with Senju, and I would like to try other sake from time to time.
