The sweetness is moderate - the sourness lingers in the back of the nose even after swallowing.
Compared to the Honjozo Nakadori, which is the best in terms of cost, this one has a more dignified mouthfeel. The sharpness is about the same.
Rather than a fruity, light umami, it's a more seductive, layered umami.
It's delicious! But I think the peak will come on the 3rd to 5th day after chilling it hard!
