Sweetness and umami. Aroma and acidity that lingers in the mouth. It is refreshing and goes well with all kinds of food. It is especially good with light dishes because it does not kill the flavor of the other ingredients. The back label recommends lukewarm heating, which is certainly a good way to expand the umami.
