The scent is modest, with a slight aroma of rice.
I expected a light taste, but contrary to my expectation, the flavor is very strong and umami is very strong. A surprise in a good sense. The impression is that it would go well with light white sashimi.
I am grateful to my junior colleague, as I would not normally choose this type of fish myself. It was a great learning experience.
