Pineapple-like aroma.
When you drink it, it tingles and has a dense sweetness like a fine pineapple or apple.
After a delay, the umami of rice comes in, and some bitterness gradually turns to spiciness, and it gradually pulls up, but it also feels sharp. The acidity is low.
This is a very high quality smooth modern. The bitterness disappears in an instant, so there is no discomfort at all. This may be the most successful modern sake we have had this year. It is suitable on its own.
Although it is not actively recommended during meals, the timing of the change from umami to bitterness and spiciness in the latter half is good, and it harmonizes with meals surprisingly well.
On the second day, the wine became less lively and a little less so than on the first day, and I thought it was recommended to drink it early... but on the third day, it came back. Apparently, the first day's corking was not tight enough 💦.
Not many liquor stores sell it, but if you can get it, I highly recommend it.
The price of 1,800 yen for 50% Yamadanishiki milled rice from Hyogo Prefecture is also a good value.
